Roasted Carrots

Ingredients
- thin carrots, greens attached
- 2 Tbs olive oil
- 2 Tbs balsamic vinegar
- 5 garlic cloves, minced
- 1 Tbs fresh thyme, minced
- salt&pepper
- 2 Tbs fresh parsley
Instructions
- preheat oven 350 degrees F
- slice once lengthwise any thick carrots
- toss everything except parsley
- roast 35 to 40 minutes, until tender
- sprinkle with parsley and serve immediately
